Cheesecake made for a goodybe dinner with friends
Not too sweet. Not too rich. Comfortable and smooth.
I don't quite remember all the details of making this cake but the results didn't last long. I think the recipe was something like this...
Ingredients:
3/4 tub of ricotta cheese (must have eaten the first 1/4 before I got it out to bake...)
1/3 cup liquid honey
2 eggs
1/3 cup flour
1 cup graham crumbs
1/4 cup margarine
Directions
1. melt butter and mix with graham crumbs
2. pat buttery graham crumbs in bottom of a cheesecake pan or other 8" cake dish
3. Add egg yolks and honey* to ricotta cheese and beat together
4. Mix in flour
5. Beat egg whites in separate bowl until white and double or triple in size
6. Add egg whites to cheese/egg yolk/flour mix
7. Pour cheesey egg mix on top of graham crumbs
8. Bake for 30-40 minutes at 400 or until slightly brown at edges and toothpick comes out clean
